Protein Pancakes
Protein pancakes are THAT breakfast. They are the perfect breakfast that always leave me feeling so satisfied and not only this but they taste even better.
The best thing about protein pancakes is that you can change up the toppings to keep them fun and different each time you make them!
Ingredients:
2 eggs
1/2 cup rolled oats
One serving of protein powder (I use vanilla)
One ripe banana
Plenty of ground cinnamon
1 tbs chia seeds
Splash of milk or water
1 tsp butter or coconut oil
Method:
Start by adding all ingredients to a cup and blend until smooth
Heat pan on a low - med heat and add butter or oil to pan
Once heated, pour batter (this mix usually makes 4 medium sized pancakes for me)
Allow to cook for 3-4 minutes to until bubbles start to form on the top and then flip for another couple of minutes until cooked through

This is the fun part
I love topping mine with a few of the following:
Greek yoghurt
Seasonal fruit
Nut butter
Maple syrup
Hemp seeds
Frozen fruit
Jam
