Chilli egg scramble

Sometimes you just crave a classic scrambled eggs! This is exactly that with a twist of course.

I love having this savoury breakfast on the weekend when I have a little more time up my sleeve and enjoy eating it in the morning sunshine.

Ingredients:

  • 2-3 eggs

  • Splash of milk of choice

  • Spinach

  • Mushroom

  • Chilli flakes

  • Your choice of butter

  • Sourdough bread

  • Salt + pepper

Method:

  • Whisk eggs and a splash of milk in a bowl

  • Add a little butter to pan on low - med heat

  • Add mushrooms to pan and let fry with butter for a couple of minutes or until slightly brown

  • Add eggs followed by the spinach to the pan

  • Sprinkle chilli flakes on to the eggs

  • Begin scrambling on a low heat until cooked through

  • Toast sourdough bread

  • Add scramble to toast and season with sea salt flakes
